Learning how to cook a chuck roast is easy. Even for those who don’t know their way around the kitchen, or maybe don’t like to spend too much time preparing and cooking meals, the chuck roast is a great, nutritional dinner for the family that won’t have you sacrificing quality time with your loved ones.

The families of Painted Hills Natural Beef have been ranching in Central Oregon, specifically Wheeler County, in the shadow of the state’s famed Painted Hills, for generations. While times have changed in the last two and a half decades, our methods of ranching the way nature intended have not. Pasture raising our cattle without the use of added hormones and never given antibiotics. It means taking the time, care, and effort to do things right. It means raising a beef product for you that’s as striking as the natural wonders it’s named after.

Ingredients

  • 5LbsPainted Hills Natural Beef Chuck Roast
  • 4xGarlic Cloves
  • 4Tsp.Fresh Thyme
  • 1xFresh parsley
  • 3Tsp.Olive or Vegetable Oil
  • 4Tsp.Salt
  • 1 1/2Tsp.Ground Black Pepper
  • 1Tsp.Paprika (or to taste)

Instructions

  1. Chop Garlic Finely. Add thyme, oil, salt, pepper, paprika, and parsley; process until paste forms
  2. Pat meat dry with paper towel. Rub meat all over with herb paste. Cover and then chill at least 3 hours. (Paste can be prepared 1 day prior - keep refrigerated)
  3. Preheat oven to 450°F. Place meat, fat side up, on rack in roasting pan. Add sliced onions around the meat for extra flavor.
  4. Roast meat 15 mins. Reduce oven temperature to 350°F. Roast meat until the thickest part of meat registers 130°F for medium-rare, about 35 mins (or 140°F for medium, about 40 mins).
  5. Remove from oven; let stand 20 mins. Cut crosswise into 1/2" thick slices
  6. Arrange meat on your favorite serving platter and add some parsley for decoration. Serve and enjoy!
