This is the Painted Hills Natural Beef team’s favorite way to cook a flank or skirt steak. If you find yourself leery of cooking this cut of meat, you’ve got to give this carne asada recipe a try! It’ll change your mind about these two beef cuts and add a new dinner idea to your monthly rotation.

Did you know a flank steak is technically not a steak at all? Instead, this popular cut is a portion of the cow’s belly muscles. It benefits from marinating and grilling over high heat as it’s a piece of lean meat containing almost no fat. Despite its reputation, it is tasty and tender when prepared properly.

Similarly, the skirt steak is often substituted for flank steak. It’s cut from the nearby diaphragm region and features a prominent grain with more fat than a flank cut. This results in richer-flavored meat perfect for grilling, tacos, fajitas, and stir-fries.

The families of Painted Hills Natural Beef are ranchers in Wheeler County, Central Oregon. They raise cattle and steward the land in the shadow of the state’s famed Painted Hills for generations. Ingredients

  • 1xPHNB Flank Steak
  • 1xLarge orange
  • 3xLimes
  • 2Tsp.Garlic (minced)
  • 1Tbsp.Salt
  • 1Tbsp. Ground pepper
  • 2Tbsp.White Vinegar

Instructions

  1. First, fire up the grill, you want the grill hot (minimum 375, optimal 400) before you put that flank on. https://vimeo.com/manage/videos/697134573
  2. painted-hills-natural-beef-march-2022-3 Set out the thawed flank steak and allow it to air dry for 10 minutes before putting the flank in a large bowl.
  3. painted-hills-natural-beef-march-2022-7 In the bowl add your vinegar, orange juice and zest, juice from 2 of the limes, the garlic, salt, and pepper. Allow this to marinate for 15 minutes.
  4. painted-hills-natural-beef-march-2022 THROW IT ON THE GRILL! Put over the most direct heat for the optimal color on your flank, put the cover on and walk away for 5 minutes, after the time is passed go out and flip your flank, put the lid back on and cook for another 2-3 minutes or until desired internal temperature is reached.
  5. painted-hills-natural-beef-march-2022-2 Remove your flank from the grill and allow to rest for 15 minutes to preserve all the juices in the steak. Slice thin and enjoy. Place the remaining slices of lime, in a cold Corona.
