Traditional Cowboy Chili

This easy cowboy beef chili recipe is a fall and winter favorite. It’s quick to make and customizable for all beef lovers. Painted Hills Natural Beef insider: it’s a cowboy favorite around here, hence the name.

While the rest of the United States argues with Texas about beans in a chili recipe, we say add them! The extra flavor and protein will keep your belly happy and full. That’s the great thing about chili; you can customize the added ingredients to cater to your crowd’s tastebuds. A little about our beef:
The families of Painted Hills Natural Beef are ranchers in Wheeler County, Central Oregon. They raise cattle and steward the land in the shadow of the state’s famed Painted Hills for generations. While times have changed in the last two and a half decades, ranching the way nature intended has not. We’re proud to pasture raise our cattle without added hormones and no antibiotics. We raise a beef product for you as striking as the natural wonders it’s named after.

Ingredients

  • 1 1/2LbsPainted Hills Natural Beef Top Sirloin (cut into small chunks)
  • 1xOnion, coarsely chopped
  • 3Tsp.ground cumin
  • 2Tsp.ground coriander
  • 1/2Tsp.ground chili
  • 1/4Tsp.Ground smoky paprika
  • 3C.Beef Stock
  • 28OzCanned whole tomatoes
  • 14Ozcan red kidney beans, rinsed and drained
  • 1xSalt and cracked black pepper to taste
  • 2Tbsp.Chopped Coriander
  • 1xSour Cream to serve, if desired
  • 2Tbsp.Olive oil

Instructions

  1. Heat a little oil in a large deep frying pan over medium heat. Add the steak, cook until just browned.
  2. Add the onion, cumin, ground coriander, chili and paprika to the meat, cook and stir for 2 mins. Add the stock and tomato
  3. Reduce heat to low, cover and cook for 11/4 hours, stirring regularly. Uncover and cook for another 30 mins, or until the meat is very tender.
  4. Add the kidney beans and cook for another 10 mins. Stir through the salt, pepper and coriander
  5. To serve, top with a dollop of sour cream if desired
