Ingredients

  • 1 12LbsPainted Hills Natural Beef Top Sirloin (cut into small chunks)
  • 1Onion, coarsely chopped
  • 3Tsp.ground cumin
  • 2Tsp.ground coriander
  • 12Tsp.ground chili
  • 14Tsp.Ground smoky paprika
  • 3C.Beef Stock
  • 28OzCanned whole tomatoes
  • 14Ozcan red kidney beans, rinsed and drained
  • 1Salt and cracked black pepper to taste
  • 2Tbsp.Chopped Coriander
  • 1Sour Cream to serve, if desired
  • 2Tbsp.Olive oil

Instructions

  1. Heat a little oil in a large deep frying pan over medium heat. Add the steak, cook until just browned.
  2. Add the onion, cumin, ground coriander, chili and paprika to the meat, cook and stir for 2 mins. Add the stock and tomato
  3. Reduce heat to low, cover and cook for 11/4 hours, stirring regularly. Uncover and cook for another 30 mins, or until the meat is very tender.
  4. Add the kidney beans and cook for another 10 mins. Stir through the salt, pepper and coriander
  5. To serve, top with a dollop of sour cream if desired
