Kosher salt and coarse ground pepper

Garlic (optional)
Instructions
Bring roast to room temp
Coat roast evenly on all sides with Kosher salt and coarse pepper 2-4 hrs before smoking
Smoke at 225° for three hours or until internal temp reaches 160 to 180
Slice to desired thickness and serve
